There’s nothing like a full sink of dishes to scrub after having a nice dinner, so this week I’m sticking to recipes that use just one pot or pan. These easy-peasy meals will make the evenings that much more relaxing and maybe I’ll even have enough time to finally finish the book I’ve been reading! Your Meal Plan Chipotle & Corn Chowder It seems like fall is arriving in the kitchen a little early this year and I get it. With everything that’s going on in the world, it’s fun to have new things to look forward to—like the hot pots of creamy soup on the stove and campfires on cold nights that I have my mind on! This week’s dinners, like the Chipotle Corn Chowder and sheet-pan Paprika Chicken Thighs with Brussels Sprouts will satisfy that fall craving, while recipes like the veggie-packed Sheet-Pan Chili-Lime Salmon with Potatoes & Peppers still have some of that fresh summer flavor for those warmer nights. You can make cleanup even easier by soaking skillets and soup pots in the sink while you eat dinner, and cover your sheet-pan with tin foil, so no scrubbing is necessary!
