When it comes to dinner, I’m all about ease. While I do love trying new recipes, that may happen once a week, and then the rest of the week’s dinners are tried and true recipes I know by heart and always love. This week’s dinners are the ones that I’m currently loving and cooking on the regular. They’re easy, delicious and oh-so satisfying! Your Meal Plan Shrimp Tacos with Avocado Crema Some form of the Eggs in Tomato Sauce with Chickpeas & Spinach and the Superfood Chopped Salad with Salmon & Creamy Garlic Dressing are on my dinner table at least a couple of times a month. They’re yummy recipes that can also be adapted based on what you’re craving or what’s on hand. Sometimes I’ll change up the herbs and spices or veggies in the egg skillet or the protein or dressing in the salad. I also love having nights when we do “take-out at home” and make things like tacos and pizza, both of which you’ll see on the menu. And let me tell you about my love of hot dogs this summer! I just can’t get enough =) I hope you enjoy this week of dinners just as much as I will! Did I mention that all but one of them takes 30 minutes or less to make? To get my fix, without the need for a campfire, I’ll be making these two-bite, protein-packed S’mores Energy Balls instead. They have all the flavors of a classic s’more rolled right in.
