I have a longstanding obsession with Starbucks’ Bacon & Gruyère Sous Vide Egg Bites. With 300 calories and 19 grams of protein, they’re a filling and delicious breakfast option. But, unfortunately, they also pack 30% of your daily sodium allowance. Oh, and they cost $5 for two little bites, which isn’t exactly in my daily breakfast budget.

Though I still love my Starbucks Bacon & Gruyère Sous Vide Egg Bites, I’ve saved a ton of money by making my own at home with my handy silicone mold. I also love that I can make them a little bit healthier by cutting down on the salt or adding extra veggies.

These egg bites are perfect for people like me who hate to eat the same breakfast every morning, because you can prep a few different versions ahead of time (think: Southwestern-style egg bites, egg bites with tons of fresh veggies or Greek-inspired egg bites), freeze them and heat them up in the microwave when you’re ready to eat.
